Healthier cookies never fail and by adding protein powder you get protein-rich cookies that you can enjoy between meals or after a workout. These are chewy, crunchy and filling, and can be enjoyed with a better conscience!
Ingredients
- 250 grams of peanut butter - preferably organic and creamy version, as crunchy peanut butter makes it difficult to mix the ingredients
- 135 grams of brown sugar substitute - sukrin gold or coconut sugar are good alternatives
- 30-60g Whey protein powder - We recommend vanilla or neutral as these do not affect the taste to the same extent
- 1 large room temperature egg
Procedure
Mix the ingredients in a bowl and mix well, preferably with a hand mixer. Mix until a thick dough forms. Form 10-12 small/medium sized balls and place them on a baking sheet with baking paper. Press each ball down and shape into a cookie. Bake the cookies for 10-12 minutes at 180 degrees or until the cookies start to turn golden around the edges. Cool on the kitchen counter and enjoy these delicious protein-rich cookies.
Tips
- Add dark chocolate to the dough or on top of the cookie before baking them in the oven.
- Can replace peanut butter with almond butter or other creamy nut/seed butter
- The biscuits are high in calories and filling, each biscuit contains approximately 150 kcal.
- Experiment with the amount of protein powder, some prefer less and others more.
